I watched this movie last night...the Spanish guitar is Johnny Cash's "Ring of Fire". The first few bars of RoF (with the horns) match the first few bars of this music. An earlier scene (I don't remember which one) had the Spanish guitar version of RoF's chorus.

Thanks so much for the reference! The MI2 movie credits don't even mention the song and I had to do a lot of digging just to attribute the remix to Hans Zimmer when I posted this. Following your reference... Wikipedia says Vangelis created the song entitled "L 'Enfant," in 1979 for a nature documentary. The song was released on his album "Opéra sauvage." I actually like Zimmers abbreviated rendition a little more, but the original is great too.
