- Here's my Recipe for Oatmeal Carrot Cake, a healthier alternative to regular carrot cake. It is Vegan and gluten-free. Flavored with spices, it makes an excellent snack cake or tea cake.

Ingredients:
Egg replacement (in place of 2 eggs) - 3 tbsp (20g.) powdered flax seed in 6 tbsp (approx. 100ml) plain water
Rolled Oats - 1 ½ cup (135 g.) (instant or steel-cut oats can also be used)
Salt - ½ tsp
Baking powder - 1 tsp
Baking soda - ½ tsp
Powdered cinnamon - 1tsp
Whole spices (optional) - 2 green cardamom, a pinch of nutmeg, 5 cloves (could be substituted ½ tsp allspice powder or chai spice)
Coconut oil - ½ cup (120ml or 100g.) (you may substitute it with any other cooking oil like sunflower oil or canola oil)
Brown sugar - ¾ cup (150g.) (you can use any other sweetener of your choice such as regular sugar, stevia, honey, maple syrup, pasted dates, coconut sugar, etc.)
Vanilla extract 1 tsp.
grated orange peel - 1 tsp (optional)
Grated carrot - 1 ½ cup (75 g.)
Chopped Almonds (or cashews, pecans, walnuts) - ¼ cup (optional)
Raisins - ¼ cup (optional)
Bake in a pre-heated oven at 350 ⁰F / 180 ⁰C for 45-50 min.
I tried it, but used eggs instead of flax.. came out really good.. couldn't stop snacking on it.. going to make it again!!
