Only when they fully die. Irys died before the full death sequence could play out, so the game reset the area and brought mogh back to full health since he wasn't technically dead yet.
The victory message (i.e. “Demigod Felled”) has to display on screen for the kill to count. The message, however, may appear more slowly if the boss is doing a death monologue or has a slower death animation. In this case, Mohg’s monologue and death animation did not finish in time before the game had to respawn Irys, so it didn’t count.
Bosses in Elden ring like doing a delayed death for some reason. Mostly the ones with story dialogue. I died to maliketh once but he died from poison at the same time, but since he had dialogue that is like 5 seconds long or so before enemy felled it didn’t count
It is a thing that was added after at least DS1. Almost every boss now has a mad long death animation and/or dialogue, because a boss only counts as defeated if the big message shows up. This is done so you cannot cheese out a win by dying together with the boss. You will always die and fade out before the boss is considered dead.

if it says "You died" then get rekt and if it says "enemy felled" then gg you won

dude I thought mohg was an easy boss, I somehow shredded him with a bleed build first try when the blood mask and the scavenger swords were meta.
