Hi Rik, they look amazing, I will give them a try tomorrow, when I am making my bread. Thank you. Here is a tip for getting the bread dough to rise, turn your light on in the oven, place your covered dough in the oven, the warmth from the light is plenty to make it rise, on the last rise remove it from the oven, 10 minutes before baking, to allow you to preheat your oven. I cover my dough with a shower cap for the first rise. Hope this helps out.
Apparently in New England this is what we call Bulkie Rolls (although they say the Kaiser is a little more sweet). Whatever they are called they are a great substantial roll for many sandwiches (much heartier than a store bought hamburger bun). Love the forming method... so much easier than a stamp and all the turning over using that involves. It's like a garlic knot just using a longer roll to form the "rose". Brilliant, Chef!! No need to be scared. It's rare that a first try is perfect and even experienced bakers have an off day. We learn by doing-the only way is to get in there and do it. I will give a little advice. The amount you work a dough matters. Bread needs to be kneaded to develop the gluten. That gives a good crumb and adds tenderness. You notice how when Rik makes bread or buns he uses the stand mixer and does a bit of hand kneading or shaping. When he makes a scone or biscuit or dumpling he mixes it until just combined and there may be little lumps of flour remaining which is what you want. Overmixing makes those tough and hard. Bread dough should be stretchy and not stick to your hands without a flour dusting and scone or biscuit dough should feel a bit wetter and stickier and usually needs a little dusting of flour to manage. So as a general guide-if it uses yeast it needs kneading and working. If it uses baking powder mix it lightly and as little as possible. Also you may need additional liquid for soda bread/scones if the batter looks dry. Don't be afraid to add a little extra-a tablespoon or so. Heat and humidity in the room matters so each batch can vary day by day. And of course, Rik is absolutely right-a little butter after it comes out of the oven makes a tender crust. I'm not a fan of 'crusty' bread so all of mine get a brushing with butter. You can do this.

You are right Rik,they are all over NY.Every deli has Kaiser rolls,subs,rye bread,and even white sandwich bread .Hamburgers are good on them,and chicken,tuna,and shrimp salads,roast beef needs rye,and an Italian needs a sub.I guess white toasted would be good for a happy waitress special (cheese,and tomato) on grilled bread.By the way the pattern was perfect.😊

Rik, I 100% agree with you about blend of bread flour and AP. I had a very strict bread recipe for years and found by accident (I ran out of enough bread flour) that the blend produce much better results.

Is there anything you can't cook? These look absolutely smashing! I have a question if you don't mind. Given there are no preservatives in the rolls, if I made them today, would they still be nice and fresh to have for lunch tomorrow, or do they need to be made and eaten the same day. I love sesame seeds on rolls!
I make my own bread rolls, I use warm water with a tablespoon of sugar to get the yeast to rise leaving the yeast in the water for 10 minutes to activate then it's everything in the stand mixer for 10 minutes. I lety ir proof for and hour at 50 degrees in the air fryer on the dehydrate setting. I cook the rolls at 170 degrees for 15 minutes then do the bottom for 3 to 4 minutes to get them a light brown.
Never had these, they look amazing. When bread is back on my menu I’ll give them a go. Do you have any good recipes for keto bread? Most of it is rubbish so I just don’t eat any bread. I’ve tried numerous recipes but I’m always disappointed
@@BackyardChef Me too usually. I had a high random blood glucose test at docs recently and I’m desperately trying to reverse it. I’ve got to change how I eat or I’m going to have more health problems than I do already. Don’t worry about it, I’ll keep practicing myself. xx
A little more work without a stand mixer. Doesn't have to be a kitchen aid they all do the same job! Not sure about the cast iron unless you are cooking in a pan with a lid on. Thank you. Best, Rik
It's definitely doable by hand it's actually better in my opinion. But my tip would be to knead way more than u think u need to. And buy good quality yeast n your good! 😁❤️ I find it very therapeutic the more u do it the better you'll get. ❤ Homemade pizza dough is the best and sub rolls 🤤 x
They're right-kneading by hand takes more work but that's how it was done far before mixers. Watch a few videos on kneading but a tried and true method is after you bring it together and get it so it's not terribly sticky push the dough away from you with the heel of your hand, fold it in half, give it a quarter turn and do it again. Keep it up, dust a little flour as needed. You will feel the dough change texture. My aunt who taught me to bake said good bread dough should be soft and resilient like a baby's bottom. Not sure if that bit of wisdom helps or hurts...
@@dianeladico1769 that's very true! I find the best dough is soft and smooth and stretches without breaking. I find that little bit more kneading for sticky dough helps instead of adding more flour that moisture is good for softer bread. It is all about technique too with kneading like you said watching UA-cam videos helps and trying to replicate it becomes second nature after awhile. I do both by hand and by mixer with dough hook. It depends how I feel and the quantity lol. Making something like tortilla wraps or pitta bread may actually be more beginner friendly too x ❤️

I knead by hand, don't knead as long as i used to and it turns out great, good flour and yeast, warm rising environment.
