- The chicken roast that is a staple at most Malayali households. Roast for Keralites is way different than roast in real terms
But then we love our roasts! The
recipe is as follows!
Chicken with bone 500gms
Oil
Bay leaf 1
Elaichi 3
Cinnamon 1
Cloves 3
Star anise 1
Onion 3 sliced
Ginger 1 inch
Garlic 6-7
Green chilli 2
Tomato 2 sliced
Red chilli powder 1 tbsp
Coriander powder 3 tbsp
Pepper powder 1 tbsp
Turmeric powder 1/2 tsp
Curry leaves 2 sprig
Salt
Garam Masala 1 tsp
Coriander leaves a handful
Temper the oil with spices, add onions and sauté till they are caramelised. Add crushed ginger, garlic and green chilli and sauté for a minute or two. Add tomatoes and sauté till mushy. Add the spice powders and sauté for 2-3 minutes on low flame. Add salt. Add chicken and mix till the masala coats the chicken. Now slow roast on low flame by mixing on regular intervals. Ensure it doesn't get burnt. Do not add water, the water from the chicken is enough to cook it. Once it turns dry and dark add garam masala and coriander leaves and it's done!
