- Garlic Chutney:
1. Add garlic pods, red chily powder, coriander and cumin powder, add salt.
2. Pound into grinder coarsely without water, keep aside
Besan stuffing for Stuffed Brinjals:
3. In a vessel take required amount of besan flour, add above garlic paste, oil, coriander leaves.
4. Add salt as per taste, using little water mix the above ingredients and knead into dough.
Brinjal Stuff : Long purple brinjal
5. Wash brinjal, slit them vertically in one side for stuffing.
6. Heat in kadai oil, add cumin seeds, let it splutter.
7. Add stuffed brinjal one by one, stir and fry till brinjal skin changes.
8. Add 1 cup water inside vessel, close the lid, add 1/2 cup water on the lid.
9. Let it cook for few minutes. Water inside the vessel and on the lid helps in dual heat.
(use lid to close which can hold water). Color of brinjal becomes brownish green and tender.
Chilly Stuff:
1. Clean chily, deseed, Slit green chilly for stuffing.
2. Add the masala stuff into green chily. (Besan stuff Dough)
3. In kadai spread 1 to 2 tsp oil, fry the stuffed chily

I like the fact you go straight to the cooking, but they did not have begun in ancient India, nor powdered spices. But I get it. Please plant a few trees around your farm between the plots so you can enrich the soil and give the birds a place to rest and have more cooking fuel for the future. I do love your cooking style. बेहद दुःख होता हे भाई, मेरे मामा लोगो ने गाव का घर बेचा सिटी में रहने के लिए क्योंकि गाव में सुविधाएं नहीं थी और अब जब सभी सुविधाएं सिटी में मिली तो गाव का सुकून याद आता हे।। हम भी खेतो में गक्कड़ बाटी बनाते थे जिसकी जगह अकबरी पनीर और मलाई कोफ्ता भी नहीं ले सकते।।

The recipe looks yummy....must try it :) ......however.....the things which may not categorise this as "ANCIENT" way of cooking are ...the use of refined sugar......refined oil. I am sure there may be other substitutes...or...equivalent ingredients which may have been used in ancient style of cooking

This is for the non-Indians (especially westerners) and relates to a misnomer. 'SPICY' food does not mean 'CHILLY HOT'. Our blogger here surely prefers high heat in his dishes. But then people may have observed that Indians use other condiments too: coriander (whole or powder), Cumin (whole or powdered), Fenugreek, Basel leaves, turmeric powder, cloves, cinnamon, cardamom, black pepper, black cumin, white mustard seeds, black mustard seeds, curry leaves, star anise, fennel bulb, black cardamom, nutmeg and on and on. They vary from region to region. Even the oil used vary - Indians from southern region prefer coconut oil, north Indians prefer Mustard and Sunflower, somewhere in the Central part use Cottonseed oil, while few even groundnut oil as their staple medium for cooking.
So if you are not into 'chilly hot' kinds of stuff you need not add that and yet enjoy spicy Indian dishes. I hail from a region where one would not dare indulge in the amount of 'chilly' (both red and fresh green variety) our friend here does. But then that is his acquired taste. Thanks.
