Have you done any DO testing to see what the result is from the process? Any thoughts on how to limit the oxygen ingress after filling?

I have not done any DO testing since I'm just a home brewer I don't have access to anything like that. I have aged multiple new England style IPA's for up to a year with no issues.
Get the lid on The can as fast as possible, if you watch my filling videos I get the lid over the foam immediately and seam as fast as I can get it there.
For what it is, it works great.

I do not have a kit, unfortunately I would spend too much time trying to answer questions.
Most of the work is welding and wiring, a lot of folks don't a welder. If you're interested in welding your own up shoot me a PM and we can discuss it.

How does the filler head know when to switch off?

You flip a rocker switch to close the valve.
