You're making me hungry! When my kids were little I used to roast my whole chickens because 20 years ago whole chickens were cheap, at 49 cents a pound! My hubby loved it crispy and succulent!😊
Wonderful recipe! Rachel, this chicken looks so delicious. Big and meaty, and organic, too. This is a must try recipe for us. We can’t find such nice chickens in our area, but I may cook up 2 chickens for this meal, because I don’t think there would be enough chicken with only one, because I know everyone is going to go for seconds. I remember my mom use to cook vegetables with her baked chickens. She used carrots, onions, potatoes, and celery. She always made gravy with the juices that cooked out, and we’d pour it over our potatoes and carrots. We had biscuits, a toss salad, and a side dish of corn or green beans. This will make a wonderful meal on Sunday! Thank you Rachel.
This looks great. I make a similar roasted chicken, except I love to add sweet potatoes along with the white. The flavor of the sweet potatoes combined with the chicken juices and salt make a nice contrast.

Rachel I have to say I have been watching you I believe from the beginning and one of the things I love about your cooking is your measuring of the spices. So people just shake so much that makes me feel like they are adding to much. I will not say any names but some people put so much that I think it would be hard to eat. They say as an example it's just garlic powder, onion powder etc. please let me know what you think would it have to much seasoning or is it just me. Can't go wrong with fresh rosemary and garlic! I loosen the skin like you and mince rosemary and garlic super fine and stuff that under the loosened skin and roast the chicken. I love that layer of spices under the crispy skin. I'm hungry now!😊❤

Yummy, I usually just buy a Rotisserie Chicken from the Grocery Store, but I'm wanting to try roasting my own, I'll try this recipe in a couple months when it cools down, it's around 108F today and my oven at 400+ for an hour or more will make my Air Conditioner run for hours and thus costing way more than the $9.00 for the Store bought Chicken. Life is full of trade offs.
