Very well might be! Plup makes Sheik look anything but easy - he's always moving and throwing out hitboxes, and having that kind of consistent and smooth control takes crazy talent.
Sheik was never that easy at top level. It's just the way M2K played was so methodical and he always went for the simple clean options with her in comparison to all the other sheiks and he was the best. So M2K made sheik look easy. Plup on the other hand is the fastest player to touch Melee and his Sheik uses it in a way M2K simply doesn't. He also uses a lot more fast reactions rather than bread and butter which makes sheik look much more dynamic. M2K especially on sheik uses bread and butter options the majority of the time so it's a completely different thing to watch, and makes it look easier when he does 1 of 3 combos over and over in comparison to Plup who does crazy fast nonsense to try to clutch stuff where M2K would simply reset.
You're totally right - I think the difference might be that static approach that M2K takes versus the more dynamic playstyle that Plup employs. Neither is easy (hence why they're the top two Sheiks in the world with only Swedish near them) but Plup's has definitely garnered more admiration for the reasons you highlighted.

bc melee is a very fast game not just these commentators but almost all of them do this they focus on a key moment of the game and go into great detail about it
You have to, you can't do "play by play" commentary with smash because it's totally pointless. Much more interesting to analyze a key moment that swung the game than to do that cringy shit they're doing with Ultimate where the commentators take turns screaming about what's happening.

It just helps to release some of that frustration immediately instead of letting it slowly release over time; is it primitive? Sure but it definitely helps.
