ANDHRA CHILLI CHICKEN
Servings : 2
Ingredients
For Marinating Chicken
750 gm Chicken - curry cut (चिकन)
Salt to taste (नमक स्वादानुसार)
3 large Onions - sliced (प्याज़)
4-5 fresh Green Chillies (हरी मिर्च)
1 tbsp Oil (तेल)
¼ tsp Turmeric Powder (हल्दी पाउडर)
2 tsp Ginger-Garlic Paste (अदरक लहसुन का पेस्ट)
For Paste
1 cup Coriander Leaves (धनिया पत्ता)
3-4 fresh Green Chillies (हरी मिर्च)
Salt to taste (नमक स्वादानुसार)
1 tbsp Oil (तेल)
Other Ingredients
1 small Lemon juice (नींबू का रस)
fresh Coriander Leaves (धनिया पत्ता)
Process
For Marinating Chicken
In a bowl add chicken, salt, onion, green chillies, oil, turmeric powder, ginger-garlic paste and mix everything properly, keep aside for half an hour.
For Paste
In a grinder jar add coriander leaves, green chillies, salt, oil and grind it into a fine paste. Keep aside for further use.
For Cooking Andhra Chilli Chicken
In a heated kadai add the marinated chicken, cover and cook on medium heat until 20-25 minutes or 85%.
Now remove the lid and stir it once properly then add the paste and continue cooking until fully cooked.
Once cooked, finish it with lemon juice and garnish with coriander leaves. Serve hot.

This reminds me of a time when my son was an year old and he had never tasted salt or sugar. My friend cooked chilly paneer and my son got hold of the bowl of left over dish after the party was over. I can never forget the sight of the baby sitting on dining table with bowl in his lap eating fist full of chilly paneer, crying profusely with tears streaming down his cheeks but still going on morsel after morsel.. he polished the bowl. As chef says you can’t eat and you can’t leave.
