  • Gavar Thecha with Millets Rotla
    #### Ingredients
    For Rotla:
    Bajri Atta: 3/4 cup
    Jawari Atta: 1/4 cup
    Fresh Methi Leaves: 1/4 cup, chopped
    Flax Seeds: 1 tbsp
    Salt: 1/2 tsp
    Lukewarm Water: for binding
    For Thecha:
    Gavar Fali (Cluster Beans): 1/2 cup
    Roasted Peanuts: 1/4 cup
    Green Chilies: 1/2 cup
    Garlic: 1/3 cup
    Salt: 1 tsp
    Cumin Seeds: 1 tsp
    Turmeric Powder: 1 tsp
    Coriander Leaves: 1/2 cup, chopped
    Oil: 2 tsp
    #### Method
    For Rotla:
    1. In a bowl, combine lukewarm water with 1/2 tsp salt and mix well. Set aside.
    2. In a mixing plate, add bajri atta, jawari atta, chopped methi leaves, and flax seeds. Gradually add the salted water to bind a semi-soft dough.
    3. Cover the dough and let it rest for 10 minutes.
    4. Knead the dough again and shape it into small roundels.
    5. Heat a tava (griddle) and roast the rotlas on both sides. Optionally, roast them over a gas flame for a smoky flavor.
    6. Apply ghee on the hot rotlas and keep aside. The rotlas are ready.
    For Thecha:
    1. Heat a pan and add gavar fali. Cook it by adding water until it becomes semi-soft.
    2. Add green chilies, garlic, cumin seeds, turmeric powder, coriander leaves, and salt. Cook for a few more minutes.
    3. Once cooked, grind the mixture coarsely in a mixer jar or mortar and pestle. The Gavar Thecha is ready.
    Serving:
    Serve the rotlas with Gavar Thecha, accompanied by jaggery, onion, and curd. Enjoy the delicious twist of Thecha!
