      I pickled some red onions Sunday. Not quite raw but not too far off and they're delicious on a sandwich.

    I just happen to have a wife that loves them and I have a chuck and I have high 60's all next week. Looked great Brian, hope mine turns out just as delish. Baker Boy used to fuss wanting his bone. I think he 's grown enough that he is wanting a co-star role OR maybe he just wants Dad's attention. Great job Brian.

    Great video and great setup on the 18. I'm glad you bought it back. It's smart finishing it in the liquid. Chuck can dry out on the smoker.

    I've done the same... only difference is after the smoking period, I use the instant pot to get it nice and tender in like 30mins lol

    Nice! I agree with the raw onion, adds crunch and a bite. I like the flavour of cooked onions, but not the texture.

    Thanks for using the wsm I'm still in two minds which one to get, the small one or the middle one, there's only 2 off us but having the choice to do bigger cuts
    I did ask you to cook on the wsm so thank you for that until you use it again, keep up the good work, about noisy children

    Great Video Bryan I dont see much content on wsm. I tried Mississippi pot-roast. That recipe you just added the dry packets right on top it brazes in, I dont know what it was but it was extremely salty. I need to try this, I have yet to smoke anything where it dripps over coals I want to try that.

      Thanks John! And this is for sure a bit of a more salty recipe. What you cold fry is adding a cup of water to the mix to balance it out.

    Excellent video as always, great option using the Dutch oven, I usually wrap this after smoking for awhile but this method appears to add more dimensions of flavor, any suggestions on more veggies to add please share 😀🦃🥓🍖😀
