Asian Spiral Cucumber Salad

  • Save my recipe for Asian Cucumber Salad! I’ve just so happen to have all the ingredients for a Asia cucumber salad minus the green onions so I whipped it for a healthy mid day snack. Start with 5-6 Persian cucumber and spiral cut them. Add about 1 1/2 tbsps of salt in between the slices and let set for about 15-20 minutes before rinsing with cold water. Pat dry with a paper towel and add 1 tbsp minced garlic, 1/3 cup sliced onions, 1/4 sliced green onions if you have it, 1 tbsp soy sauce, 2 tbsp rice vinegar, 2 tbsp gochugaru aka Korean pepper powder ( add 1 tbsp if you want it less spicy) 1 tbsp brown sugar and 1 tbsp sesame seeds. Mix and eat immediately. The longer it sits the more soggy it will become. #asiancucumbersalad #spiralcucumber #cucumbersalad

    While it’s pretty to look at with the spirals, I’d simply use sliced cucumbers to make it easier to eat. 😏

    This looks delicious! I love cucumber. I was wondering… what is the reason for drawing the moisture out of the cucumber in the beginning? Does it cause the cucumbers to absorb more flavors? Just curious; thanks!! 😊

    Def coconut sugar here! This looks so good with the white onions!! I wud have to double this and just be in cucumber heaven. Idt gochurang is very spicy, unless its just the brand Ive been buying? Thoughts? Its really mellow and just adds great flavor imo. Its not like the heat of cayenne, is it? I love fish sauce and sambal for this, too. Tks for the post.

    I just saw another video of someone making this salad and they put in that much salt but they didn't know they were supposed to rinse it out. Man they must be puffy now.

    Love that recipe! Althought there's something I don't get: why add the salt to drain the water out of the cucumber to rince it afterwards, and therefore re-add water? - won't that ruin the effort? (that's a real question)

      Pre-salting removes some of the bitterness in the cucumber, which ends up in the liquid she rinsed off. The salt also makes the cucumbers more flexible and helps them to retain their crunch.

      Just add as much pepper as you think will be the norm for you.

      I would skip the sugar and you can use something else in place of spicy pepper. If you like anything healthy, like ginger.

      Depending on how much u ok y add, you can’t really taste the sweetness. The brown sugar is to balance the tang of the vinegar and to balance the heat from the pepper.

      Yeah, it definitely stays with the cucumber. You may not absorb AS MUCH water again, but it's extremely pointless to do it that way. Salt is to season, not pull moisture out. You have to squeeze cucumbers to get the water out if you want to be serious here.

    You're letting all those nutrients go down the drain by washing it all away, Why not use that liquid for stock or save it in the fridge as salty water for anything you're cooking plus the invisible nutrients.
