- This is a really easy cool ambrosia type salad that is so good in the Summer although my family likes it any time of year. I'm kind of trying a mini series of easy peasy recipes for summer. Hope you enjoy. Hugs Jo

Looks like a watergate salad to me 😋 except you use pistachio pudding 😋 thanks for your delicious recipe
Sounds good with pistachio. I will have to give that a try.
Too avoid over stirring, start with adding the cottage cheese to the bowl first. Add the lemon jello next and it will dissolve immediately ! I add the sour cream next and stir well. Add the fruit folding carefully so it won’t shred the oranges and fold in the Cool whip last. Much less stirring and makes it fluffier. Great recipe!

Thanks Melissa. This is one of my families favorites. I've sure gotten some good input on other ingredients you could add to this besides what I mentioned like, walnuts, strawberries, cranberries etc.. I'm going to have to try some of these. This lemon one tastes somewhat like a lemon cheesecake. Big Hugs Jo

Patti it is easy to cut it down to the size you want. We just eat it over several days it keeps so well. Big Hugs Jo
For people with hearing problems why you don't put the ingredients below?
I make something very similar to this...I tend to go with orange jello. I like tossing in a handful of chopped walnuts.
Someone else suggested to add some chopped nuts to it to. I think that would be really good. Hugs Jo

Patty this for sure isn't a low cal recipe but it is sure good. lol My grandkids like it with bananas in it too. Like I said in the video I only use them if it's going to be eaten that day like for a family gathering. Hope all is going well with you. Big Hugs Jo

Sorry but canned pineapple and it's juice I use all the time in jello and it sets. The fresh pineapple won't work.
I agree it has to be canned and drained well for this recipe.
Why use lemon jello when you have mandarins in it?? Use orange

the original salad is made with orange jello. You don't have to use mandarins if you don't want to. No it is not grainy at all. Smooth and creamy and delicious.

how far in advance can I make this? How long will it keep in frig?
Shaysha I'm so sorry I didn't see your question until now. Anyway, this will keep up to four or five days in the frig.
