One option for sweetner is glycine if you want to stay closer to carnivore. It's a non-essential amino acid that I heard about on another carnivore channel. It has a sugar like texture. Actually found it on Amazon.

Didn't think I'd love it in ice cream, but the Torani SF Hazelnut is outstanding here too, along w/the vanilla extract~ SO good! The caramel & hazelnut are definite favorites in our house. Once in a while we get real crazy & crumble up a few ChocZero (oreo)cookies in there too=) I've noticed over the few yrs of making this that different sweeteners do change the taste & texture, but just a little. We've used 100% monkfruit (straight, no erythritol)- which only takes about 1/4 tsp btw, as well as liquid stevia, allulose, vanilla or caramel "Sweet Drops", & xylitol. So far, the monkfruit & allulose work best for us~ but they all work.=) Imho, how each person/family does carnivore is absolutely up to them. The only people squawking about carnivore "rules" are those who lack confidence in what's on their own plate~ which is silly. Can't bring myself to eat raw eggs so i cook on med heat to 180 Degeees. I love to add a couple of tablespoons of instant decaf coffee powder for flavor with a touch of vanilla, salt, and a bit a Stevia. No ice cream machine so just into the freezer and stir every few hours.

This recipe looks good. I just recently started getting serious about carbs in food and I heard about monk fruit but when I checked it out, it actually had the same amount of carbs per teaspoon as sugar. My question is why wouldn't you just use sugar or am I missing something?

There are people who don't eat strictly carnivore - they mix it up a bit. There is dirty carnivore - where people add things that are a bit more than just meat. They use sour cream, ricotta, cottage cheese, cream cheese, even a bit of raw honey (on rare occasions) to make something sweet - rather then using any "fake" sugar. It can be a wide variety of foods - the main thing is removing carbs. Some people eat a keto-carni diet which mixes keto and carnivore. Some people use spices, and after doing carnivore for a while will add back an occasional green leafy veg. Then there is the carnivore lion diet which is beef, salt, water. Some carnivores eat only ruminent meats. Some people eat only grass fed animals and grass fed butter. Some people do eggs, bacon, meat. The strict carnivores can handle it, but not everyone can manage the restrictions so they try different things for variety and still get great results.
I have tried this 3 times and still my ice cream does not solidify- what can I be doing wrong? Is it the size of the egg? It freezes in the freezer but the ice cream maker does not work even after 30 minutes- I have the same ice cream maker as you. Any tips?
How long are you putting the bowl in the freezer for? We make sure it’s in the freezer for 24 hours before using it. It needs to be super frozen! Let me know if you tried that and I’ll try to help you troubleshoot! 🫶🏼❤️
We got ours at US Foods Chef Store. It’s been known as cash and carry in the past! I’m not sure where else to find them! I’ll do some digging and see if there are other stores that might carry them!
Most if not all grocery stores carry them. Smaller carton. It is safe to eat things with raw eggs because they are pasteurized. Fresh would not be on my list. Too scary.

That is not monk fruit. It is erythritol with a little bit of monk fruit. Monk fruit is fine, you couldn't pay me to eat the other. You can get liquid 100% Monk Fruit and it doesn't need to dissolve and is far healthier.

Monk fruit can crystalize and feel rough on the throat. Allulose is much better in frozen foods. Monkfruit is good in baking.

Whip them until they're solid, add a bit of sweetener, vanilla, and pop in the oven (meringue)

FYI allulose will always keep it scoopable I use impact pound size allulose and monk fruit
How much allulose would you need for 2 cups of heavy whipping cream?
Adding a Tsp of either vodka or other hardstuff helps to keep it either smoother and scoopable.
Did yours have a waxy feel in your mouth from the heavy cream? Also after freezing mine was unscoopable.

Just a helpful hint, grind your monk fruit sweetener in a coffee/spice grinder to get powdered sugar consistency before adding to mixture
