I think this was alluded to in your analysis, but I particularly favour the theory that the birds are a projection of the mother's anxiety when another female approaches Mitch's affections. (So, I guess this would come under the Oedipal theory). By the end of the film Lydia is more at peace with Melanie's presence, but there may still be a residual tension, hence the birds more subdued nature.
Could you imagine if the rolls of Melanie and Mitch were reversed ! All the troubles she went through to find his address through his license plate number and go to his home and sneak into the house ! This would just be a stalker film !

Because notice after Melanie delivers the love birds to Mitch's house, a flock of seagulls start coming in front of the house. They hated seeing the love birds been captive in a cage and melaine holding them. Also notice that single seagull attacking her. It was the birds' revenge on melanie and all of bodgea bay because they think that humans like melaine take captive of birds. Also definitely notice why the birds killed that farmer Dan fawsett, because he has chickens and he kills, cooks and eats chickens. Only three species of birds attack Crows, Gulls, Sparrows
