Hi! I noticed that the batter seems runnier than the one in your plain mochi bread video. Is it because of the matcha powder or adjusted proportions of ingredients?
Hello! Unfortunately we haven't found a way to make the texture perfect by reheating. The closest we got was to reheat in a microwave covered in plastic 10 seconds at a time until its warm through and steams its self. But the crisp outside is lost. The best way overall is to pipe the on a tray and freeze the unbaked balls. Then when frozen just put them in a bag and keep them frozen. When you want them just put them on a parchment tray and bake them frozen. Just add a few extra minutes to account for them being frozen.
Hello! For the initial step, you can use all-purpose flour (plain flour). However, in the second step, when you incorporate the tapioca flour, there is no substitution. Just a feedback, there are way too many unnecessary subtitles and random chit chat for this to be a practical and straightforward baking guide. amateur bakers like me have to watch a video 2-3 times to learn, and it's impractical to be hands-deep in dough and waiting for chit chat to be over. Whenever you mix something tgt you should state what's being added

hello! We never tried it but it should be fine. if the batter looks a lot thicker then you might need a little more egg but not a whole one.
