I don't have a roof vent/fan. When it's cold, having a continual air exchange might not be a good idea, depending on how cold it gets. I have a small dehumidifier, which makes a big difference. Running that over night and running the diesel heater in the evening, to dry everything out, is also a big help. But most of all, keep a window open! I suppose you could put a fan in the window over night, but that will lower the temperature. You have to adjust based on humidity and temperature. If it rains, I run the dehumidifier every time.

I imagine having the diesel heater running in cold conditions pushes quite a bit of air out automatically ( passively )providing some ventilation… given the topper is not sealed tight. I am in the process of setting up my Toyota Tacoma in a similar fashion and would like to be out during the winter as well.
Well, your winter is extreme. Truck toppers have poor insulation because of the windows. You might want to find a way to cover them. And I'd suggest buying one of the best diesel heaters, like Espar or Webasto. You'll need reliability. And of course make sure the fuel doesn't gel and your lithium battery stays warm enough that it doesn't shut off. And here's something I've just started looking into. The plywood I built with is very heavy. I'm thinking about replacing it with polyurethane foam board. 3M makes a reinforced board. It's expensive but lighter and stronger. You might want to consider that. I hope record your build. I think it would be interesting to see.
And the heater recirculates the air and doesn't ventilate. Raising the air temperature will combat condensation, but not dehumidify. Your body will raise the humidity, so that's why I use a dehumidifier. It doesn't remove all air moisture but it does offer a notable improvement. You buy small ones on Amazon and run it on 12 volts.
I usually don't watch a video for more than 4 minutes. Before I even started this video, when I saw "favorite spot", I thought, I wonder what country, state, region etc this is. When you said "This region", or "this place" etc, I kept wondering when you'd give a clue. Made it hard to follow the rest of your story. Tried to make out license plate. No luck. Finally 18 minutes in, at the end it showed a preview of a trip you made to mono lake, so I gather you are not in Africa or Australia, but western part of North America.
