The reason I came looking is because I just don't understand the difference between this and headings. I feel like it does the same thing, so I'm not understanding it as a new feature to headings that already exists. Headings has been a lifesaver for someone like me who's been writing a manuscript. I'm just wondering what tabs actually offers that's better or more efficient.
I can completely understand that. And it's a great way to manage your document as well using the headings feature. And for a manuscript that does make a lot of sense. The way I've been noticing a lot of my work colleagues utilising the document tabs feature though is for handling projects where normally multiple docs would be created for different aspects of the project and instead now they have it all located inside one Master document. This means that only one document needs to be shared out to all the team members as opposed to potentially four or five or more.
Hi! I don't have an iPad to play around on, but I played around on the Android app and presently it seems that it's only possible to view document tabs on mobile devices but not create them. You could probably circumvent the constraint by using Safari to make them, and then continue editing in the app. As document tabs are still pretty new, I expect the ability to create them in the mobile apps will come soon enough.
That currently involves either exporting the document into a Word document or printing to PDF via the ellipsis menu in Google Drive. I'm currently looking into all the options for this as I think it might make a useful video too.
Currently this is a tough thing to perform inside of Google Docs directly, but you can do this from Drive instead. In Google Docs, selecting Print will simply print out the tab you currently have active. In Google Drive, use the ellipsis (...) menu next to your Document and select Preview. This will open the Preview view and you will see that the doc shows all tabs of the document with divider pages between Tabs. You can then select to Print from here and select the page number sections for the tabs you wish to Print.
If I a paid Google Workspace user creates the document, then could a free Gmail user see the tabs, if not then would it make sense to use the document outline?

Is there a way to apply formatting across all/many tabs already created in the Doc?
If you are using the text styles such as "Heading 1" etc, you should be able to modify the style and have that apply across the Doc.

Yeah, I can understand that too.
Given that the document tabs feature is very very new, it won't surprise me if they improve upon it very quickly.

Not being able to see the document all at once is very disappointing. Back to Word.
But how do you select which tabs you want to print when it comes time to print the full completed document?!!!

Headings and document outline will suffice for most people. No need for "infinite scrolling".

I have tested it out and can confirm that the free Gmail user would be able to see and use the Document Tabs.
