Tina, tips for fried eggs. Use a very small amount of oil. Butter is preferred. Play with the amounts so the eggs do not stick to the pan and can move freely after 1 minute. There should not be any pools of oil. The pool of oil is what pops.
Also cook over a medium low heat. For my glass top stove(that has numbers1-10) I put it on a 4.
And fold some of the white part over the yolk partially before adding your second egg. This allows for smaller pans to cook more eggs.
Lastly if you are cooking an egg all the way through patience is key.

If you want to avoid chaos this is the way to go but the recipe is Asian style fried eggs aka lots of boiling hot oil so the whites get all bubbly and the bottom super crispy (the best type of fried eggs imo). The eggs don’t stick to each other because the pan is so hot it sets almost immediately
But yeah it splatters because eggs are watery

The second recipe, the omelette - your pan was wrong! On the video the chef used a milk saucepan type of thing so his eggs would be thicker and less likely to firm up all the way through. Plus the higher sides would make it easier to create the folded shape. Your pan meant that you would have a large crepe style omelette. So don’t be too down on yourselves.

He tapped his hand so he can slowly flip the egg, so it won’t flip too hard/ fast. He slowly closed the egg by tilting the pan while tapping on his wrist.

Looks delicious. If you are using a nonstick pan it definitely doesn’t take as much oil or butter. Cooking fried eggs on a lower heat helps to prevent that crusty stuff and popping. Usually slightly less than medium heat is good unless you are cooking a large amount of eggs.

For the korean marinated eggs I also like to add a bit of sesame oil upon serving. It's good on its own as well but sesame oil is like butter to korean food. Makes everything better lol. Growing up egg rice was one of my go to breakfast. It's quick simple and tasty. Just a bowl of white rice, a fried overeasy egg or 2, spoon of soy sauce, break up some dried seaweed, & a splash of sesame oil mix it up like bibimbap & enjoy

For the omelette rice egg, you are using the wrong pan for that. You need a omellete frying pan. You are using a skillet pan. The difference is the weight and the shape of the walls. The omelette fry pan is lighter and has sloped sides to make it easier to fold and flip the egg. A skillet pan is heavier and has straight deep sides. Keep the omellet pan constantly moving when you are stirring it so the heat does not over cook the eggs. Hope these tips helps a little bit.

If you wanna flip a fried egg you can fry it with a lid on in the first minutes. That way the egg will get a little firm on top as well and the yoke doesn't break as easily.

Tip on boiling eggs: before placing them in the water, tab the bottom flat part on the counter until it makes a light "tick" sound. It separates the membrane from the egg ( I dont know exactly) and it makes it easier to peel after. Make sure to crack the whole egg by tapping the top and bottom and rubbing the whole thing on the counter. Too much explanation for boiled eggs 😂😂😂

The Japanese omelette. My son came to me with it and said Mom can you do this? I said I don't know let's try. I sat down watched a couple videos. Said well here we go. I got it on the first try. And the second and the third.. my son says mom you've done this before. I said no when have you ever had this? We've had eggs scrambled. We've had the American type of omelette. We've had over easy. Over hard. Hard boiled. Soft-boiled. We've had them every way of never made them before. It's not that hard. You have to have the proper pan. Don't go too big. Don't go too small. And cook fast. You want to cook all of the white proteins... I never put cornstarch in mine. Just a smidgen of cream. That's it. No cornstarch I'm okay..
You're treating the pan and the egg like it's a newborn baby. Did you see the way he shook the pan back and forth and back and forth in circles. You're overcooking your egg.. and he pushes it towards the front of the pan. That gives it its nice curved edge. Like a football..

Onsen eggs aren’t jammy haha they’re super soft. What you referred to are soft-medium. 7 1/2 min. And yes, you need a gas stove for that kind of omurice. Pretty sure you’re using the wrong pan too 😅
