    200g unsalted butter - brown in a saucepan
    350g soft brown sugar - mix in with the butter
    1 tsp vanilla extract
    2 egg yolks
    2 large eggs
    200g plain flour
    1tsp baking powder
    pinch of salt
    1tsp ground cardamom
    - mix the dry ingredients with the wet ones
    200g choco chips
    150g flaked almonds
    180c for 30-35 mins

    Made it using 220g sugar instead of 350g, and it was actually perfect! My mum gave it 10/10, which is an achievement in itself! Thanks for sharing Chetna!

    Oh my gosh, Chetna! You have out done yourself with these blondes of pure indulgence. Oh, wait! I just threw a batch with pistachios and cardamom powder in the oven. Cardamom is my weakness. 🥰. Thank you for bringing your beautiful soul to us and sharing all these recipes. Good thing I love to mountain bike or my clothes wouldn’t fit. lol

    This looks fantastic and I can’t wait to try it. BONUS: using a binder clip to hold the parchment during baking was genius! I often struggle with getting parchment to stay in place as I’m pouring batter into the pan. I will absolutely use this for inspiration.

    200 gr brown butter/ghee
    350 gr soft brown sugar/light muscavado

    200 gr ap flour
    1 tsp baking powder

    200 gr dark chocolate chips (65%)
    150 gr flake almonds
    oven 180c 32-35 mins

    Oh my word! They look lush! Great explanation on some of the techniques like melting the butter which I confess may have worried me before seeing you do it. May i just check what size tin you used please?

    Great recipe! I'm definitely going to keep this one for later. When I was a teenager, i won a contest with pecan blondies, but looking back, I'm sure they were no where as delicious as these look to be.

    The Butter needs to be just a little darker..
    In Austria we call it 'Nuss-Butter', wich means Nut-Butter. Because of the color and nutty taste.

      She says it's still 150g flaked almonds in total. A handful of almonds was left on the side for sprinkling on top.

    Wondering if this recipe would bake well without the chocolate bits and almonds? I'm looking for a classic blondie recipe and the batter looks really good.... I've had two fails with too much moisture using two other recipes. Any help on this would be so greatly appreciated! They look wonderful as is....but wanting a plain version. Thank you!

      I think having the browned milk solids left in makes a difference to both taste and texture when it comes to baking

      Food with Chetna made them this afternoon together with the Brioche...great way to spend a Sunday afternoon! The cardamom is really subtle which is perfect and I think they would go well with a scoop of good vanilla ice cream. Thanks for being my baking buddy this afternoon 😃

    Chetna, I really think you should replace your Circulon saucepan, as a lot of the non-stick coating has worn off, leaving the untreated Aluminium exposed. I don't wish to be an alarmist, but cooking in untreated Aluminium pots has been connected to early onset Alzheimer's. My Mum had it, five years before she died, and six out eight of her saucepans looked like your Circulon pan (Some were worse). I wouldn't want learn of you (a Lovely Lady & great cook), contracting such a terrible disease in the future.

      I agree.
      My Mum in Laws saucepans 50 yrs ago had me concerned.
      I bought her a new set. She was so pleased how beautiful they looked wouldn't use them. Had to remove old saucepans when she was at work. Was concerned she'd be upset, she was actually pleased as she was really keen to use them, just didn't want to spoil them. Years later they were still immaculate. She couldn't believe how well they looked as used every day.
      My Father was an Engineer before retraining as a Teacher, it was he who made me aware of the dangers in aluminium. He became a Shop Steward in think Carron & Co, Camelon near Falkirk, Scotland, they made cookers of course using aluminium. All those years back, I was under 10, it was laughed at. He was quite correct to be concerned!
