I literally just did this for my sis that was in the u.s. for a very quick medical check up and i didn’t realize it as it happened quickly... in addition, I TOTALLY misunderstood HOW short 🙄🤦‍♀️and that the day she was leaving left very few days to get a package from where i am only fully tue other side of the country... i know🙄🤦‍♀️😬🤦‍♀️ so, I'm hurrying to feed Bob 😂 cuz i was worried about it being at its height as i had read that, so I'm glad to know it is ok to be a bit after.
So one person said to water it down... so i did water some starter down, separately of course, and spread it onto 2 large large sheets of parchment that fit in a lg sheet pan. But it seemed SO wet and i had more in my fridge of another batch i wanted to mox in for flavor, so mixed up a mishmash of several and fed it and then, as it wasnt as thuck as i normally keep mine, i used a silicone pastry brush to do 2 more lh sheet pan sized sheets of parchment. So, I'm freaking out that they all won't fully dry as we were having wicked bad storms and tornado watches... so, i used my blow druer with the diffuser on it so it wouldn't be too harsh and just blow everything all over... But, apparently, in my freaking out, I wasnt thinking straight so made it harder and took the sheet tray into my room to try it. My handicaps make certain movements very painful so where it was plugged in was a hassle so figured I'd just try it first before getting low to unplug it.🙄🤷‍♀️ so, i kept it on high, which is still suuuuper low through the diffuser, and on low heat occasionally, mostly when holding down that darn cool shot button was too painful. But i kept it well above it too, jist to be sure. So, again not thinking, i wnet and grabed 2 more sheet trays. So, i had 2 sitting on the bed while i was using a step stool to set the one i was workong on onto. I would take turns with them and even hold the sheet as i lifted the rack up, hoping it would go faster because i was bent in a very odd angle and the pain shooting down my legs was bad and i was losing feeking in parts of them and most definitely in my hands. But, i didnt care, they HAD to go into the mail that next day to be overnighted to her. She was SO excited when I'd mentioned it, that there was NO way I'd let my lil sis down. Theyve lived in western Africa well over 20yrs, she bakes bread all the time for them. But, when i mentioned that in January i had started a new starter up as it had easily been a decade since my first drove me nuts :)
So, she said it hadnt occured to her that she could possibly make real sourdough bread! Its her amd her husband's favorite bread, but she jist assumed its not something you make well at home. I knew i couldn't mail her a jar of mine, it would definitely be a mess, as well as she doesnt have us mail stuff as it rarely gets to them or there's an extra "tax" they have to pay to actually pick it up. So, this last minute thing had me scrambling on how to do it so she could have some of mine amd not have to fully start from scratch, plus its special to share it :)
Although i swear i will gladly dry some on parchment jist for the sheer pleasure of holding a sheet low, kinda inside, a large bowl, and crunching that starter and paper😂insanely satisfying by the feel and sound😂🤦‍♀️🤷‍♀️😬🤣 so, i weighed some out but did so using my tbls so that she could use a tbls as i dont think she has a scale. Sent enough for her to try well more then once just in case. I also heard it wasnt great to switch up the kind of flour used to fast, no clue if thats true, but, just in case, i took 2 sandwich baggies and put 50g of my flour in each baggie.. labling everything very clearly. But i wanted it to be flat and light for her to get home. I had told her shed need a jar later. I also folded up a couple paper coffee filters and 2 rubber bands, 1 to hold the filter down and the other for her jar to see how much it grows once woken up :) i was SO worried it wouldn't get there in time, but it did!! She left a voice note that was so cute and she was so excited i could have cried!
So, once home and after shes settled in a bit, we'll video chat amd as i kept some maybe ill make one so we're both doing it at the same time. I also printed out a very simple "recipe" for waking it up.
My only concern, and ive been trying to do lots of research, but, its very hot and very very humid where they live. So, i think itll wake up fast and she'll probably have to always keep it in the fridge as well as warching bulk ferment closely and definitely in the fridge for the long ferment as thats when ive had my best sour flavor and i know she wants deeply sour sourdough... so hopefully i wont mess her up on it and give her good advice.
But, there are a couple channels, like yours, that i trust and that i have loads of links in an email for her once settled. I just hope I did it right. Mine has been super strong her, so i hope it works for her. Once she has a routine, she could start her own from scratch completely just to try it out. And that she needs to dehydrate some to bring on their next visit in a couple years so i can use hers😊 Gosh, why would i be so emotional over sourdough 😂 but, this one is obviously more then just bread😊
SO sorry for how long this is... I'm WELL above average in only 2 things, which are overthinking and over-explaining 🙄😬😆😬🤣😆🤦‍♀️ as you can plainly see... and in my older age, it onoy gets worse apparently 😆🤣😬🙄🤦‍♀️😳😲🤣😬🤦‍♀️😊
Thank you for all that you do!!
One day i would LOVE to get that dehydrater for sure!!! But, not for a long time as we're literally in the middle of selling everything we own, including our home after having no work for so long... so, we'll be moving, should have already but we're both at our worst physical, so, its slow, especially with dealing with so many people supposedly wanting to buy something and making life incredibly difficult. Once big stuff is gone, the rest... clothes, kitchen stuff, everything, i jist want to drop at the local thrift shop... not goodwill as they charge WAY too much.. this other place is more honest in that. Oy🤦‍♀️🤦‍♀️again with saying too much...
Anyway, its in my kitchen wishlist for sure!!!
    Thanks again!!😊
EDIT: I also put a couple of those little 'keep dry' packs in her dehydrated starter, and inside 2 freezer baggies jist to be extra extra sure, even when they get home to massive humidity, it'll... hopefully... have stayed nice and dry :) 🤷‍♀️😬😊

After the first day of feeding, Do you continue to feed the 50gr water, 50gr flour for the remaining days without discard?

What do you do with the extra starter you didn’t use (you only put 10g of the rehydrated fed started into your water and flour )

If you’re going to put it in the freezer then what is the point of dehydrating it?

In the no dehydrator video, ua-cam.com/video/fnOqv4nU6bA/v-deo.htmlsi=ZpNCS0vMdxxk98Jc, she says it’s a preference.
If you freeze without drying you can damage the culture. Drying then freezing works better for people that prefer freezing.

Fresh frozen starter only lasts a few weeks in the freezer. So a vacation maybe. But dehydrated can last several decades to indefinitely

A great use for extra starter. I will try it in the Breville. Thanks for the temp warning.
