Best Ever Moist Vanilla Cupcakes with Pistachio Cream and Cream Cheese Icing | Quick and Easy Recipe

  • Moist, fluffy and very delicious Vanilla Cupcakes with Pistachio Cream filling and Cream Cheese Icing/Frosting.
    Ingredients:
    150g butter, room temperature
    300g/ 1 ½ cup caster sugar
    2 eggs, room temperature
    310g/ 2 ½ cups self-raising flour
    310ml/ 1 ¼ cups milk, room temperature
    2 tsp vanilla extract
    Filling:
    Pistachio paste (store bought)
    Cream Cheese Icing/Frosting:
    100g butter, room temperature
    50g icing sugar
    300g cream cheese
    1 tbsp pistachio cream (store bought)
    Sprinkle with chopped pistachios (optional).
    Bake in the oven 190C/374F for 20 min. Cool on a wire rack and decorate with cream cheese icing.
    If you don't have self-raising flour you can easily make it at home.
    Just add 2 tsp of baking powder into 150g of plain flour. That's all!
