I make a version with sweet potatoes, and also add other veggies depending on what I have, I also sometimes make a complete meal and add some meat or fish sometimes (chicken thighs, pork shoulder steak) or almost any fish (cod, hake, monkfish salmon etc) or even beams (eg chickpeas). Very versatile dish.
Had to make this as soon I watched this video, also had a couple of zucchini sitting in the fridge staring back sadly every time I opened it . I have to say it turned out great and will definitely be on my repeat list. This is one of the dishes that come together in a snap , throw in the oven and it’s done. Thank you for sharing.

I would chop up the tomato and use all of it. Tasty, lots of vitamins & roughage in the skin. Also, I never peel potatoes. Lots of iron and roughage in the skin.
I had everything on hand, garden fresh squash & tomatoes. Was SO delicious! Added chickpeas at the end for vegetarian protein addition.

It's a pizza stone. It makes the oven hold the heat better and is used to bake breads.
