Quick dinner ideas-Kielbasa veggies and potatoes on a sheet pan, breakfast for dinner, egg sandwiches, quesadillas and fruit or veggies. YOYO- meaning “you’re on your own” anything you can find and serve yourself(within reason!)
We love chicken stir fry also. I am going to check out the rice Ramen from Costco! We are all gluten free at my house so this is a great find. Thank you for sharing if love to see more of these videos!
So funny, I was literally just searching your channel yesterday for content like this! I so appreciate you making this video😊 you and your channel are a blessing to me!
Thank you for linking the recipes! Dinner in a pinch is breakfast for dinner, or pasta with pesto and peas: boil noodles, add frozen peas in the pot with the noodles when they are done, drain and return to pot, add pesto and chopped tomatoes if you have them. If you have cooked chicken, add it. All my kids love it 😊
I enjoyed hearing how you intend on using the items. The confirmation that sandwiches multiple times a week is ok. Another mom who isn't great at meal planning. I love your homeschool content so some of this is a fun way to get to know you better but I'm always excited about your next homeschool video. I saw you have videos about nature groups but what about nature studies as a family or nature journals. More books you recommend? Thanks for everything though.
We’ve never really done nature journaling. Loved the Explore Nature with Children curriculum. It has plans for like one lesson per week through the whole year. GREAT for younger kids like yours!
This is so helpful Erin. We just recently bought a membership at Costco. We've only been once, and I was a bit overwhelmed as to what to buy. This video gave me some great ideas!
I enjoyed this kind of video as well. I think you have an interesting niche considering you homeschool, live in a log cabin and have some land (I think). There is a lot of content to be made. A family favorite dinner is Costco's Frozen Meatballs tossed into a jar of marinara sauce served in hoagie style rolls and top with mozzarella cheese. And I too love seaweed!
We just got our gigantic Costco haul today, so it was fun to watch this. As a large family who likes to eat as organic as possible, we ended up with SO MANY of the same items, including the seaweed!! ;) We also order from Azure Standard; it would be fun to see what you like to order from them, as well.
We make a lot of veggie curries. We freeze half of the batch and thaw them out when we're ready to heat back up. Sometimes we will have shredded chicken to throw it in or shrimp.
I love good healthy grocery hails and meal Plans! Especially homeschool families that actually eat all day every day at home. We do azure and Costco as well because we just go through so much food. For milk - check to see if you have an oberWeiss dairy near you for delivery - we really enjoy having our locally raised organic milk delivered regularly!
Jordan page has a really great tip to pre slice the bagels before freezing. Then you can grab a half and toast it up whenever. My kids LOVE seaweed. I think it’s funky. Lol
This is is helpful, thank you! We shop similarly, but you gave us some new food ideas! And we haven't had a Costco membership in years. Looks like it is definitely worth renewing! Thank you so much for this and all the rest of the content you put out into the world! God Bless!!! 💗🥰
I love and have really learnt a lot from your homeschool videos. Would definitely love to see more of these kind of videos. Would also love to see a house tour. Your home is beautiful.
Thanks so much! You can see more of our home in this homeschool room tour video. I show our main living spaces along with it. ☺️ ua-cam.com/video/NIl9-h52nZQ/v-deo.html
Breakfast for dinner (pancakes or waffles, eggs and bacon or sausage) is my go to when I didn’t get meat out in time to defrost! Or pizza. I usually get an aldi take and bake pizza for emergencies. 😊
You said a couple of my go to fast meals but I'd add burrito bowls, sloppy joes (I do a cheese steak version with Worcestershire sauce and half the time it goes over rice), broccoli soup, egg stir fry, pesto pasta, sausage and peppers. I'm sure there are more but dinner on the table in under 30 minutes with little effort is a must most days of the week
Side note: in a world full of doom and gloom and anxiety is high...these videos help me to escape and focus on the pure, praiseworthy, excellent, beautiful. Thank You. ♥️ Phillipians 4:8
Great video Erin. I’m loving your channel and this new content is really practical and so helpful. I’ve been wanting to buy meat in bulk and so agree with ground beef being a quick and easy way to get dinner on the table. I’d love a video showing how to make your sourdough bread and pizza crust. Thanks for sharing!
Love your videos! We are taking the leap into homeschooling for next year. I have two kids (8 yr and 3yr). I would love to see a video on how to keep each kid focused. How do you make sure the older ones aren’t getting distracted by younger ones coloring or playing with educational items? Do the older kids have a quiet alone space for individual work? Also, any tips on keeping a space a fun learning zone…i.e. playing classical music while studying, comfy chairs?
I like sushi but I am not a big fan of seaweed by itself. My kids love these seaweed snacks they like to either eat it alone or eat them with rice 🍙 We like to make “egg sushi roll” using the big square of nori paper covered in rice with sesame oil mixed into the rice and added some flat sheets of pan fried eggs and we roll it up and cut them into pieces like regular sushi roll and it’s a great snack or quick lunch. We get so many small free floss from our dentist place so we have many floss 🤣
It sounds like we eat very similarly! Love making sourdough too! And those Tortilla Land tortillas….love them! 💜I forgot about the brown rice ramen! Good reminder!
You did so good and got some great quality and quantity for $400! I tend to go to Costco every couple of months cause when I walk in the door, boom $500. We have a family of seven though and I get diapers and wipes there as well. Also if my husband comes we end up with more snacks. Haha
Noooo seaweed yuck lol. But yep 4 of my kiddos love it don't get it 🤷🏻♀️ Ty for some great meal ideas. The korean bowl looks so good. I like to keep items on hand for when my kids want to make lunch or dinner. They're fave is fried onions mixed with salsa, annie's Mac and cheese and canned tuna or chicken. All in one.
Do you have a link to the sourdough pizza crust recipe you use? I don’t love the one I have used before. I have recently found your channel And enjoy your your homeschool content very much! This video was wonderful too and it sounds like our families enjoy similar foods.
Loved this vlog. No I'm not a fan either of seaweed. 😁 I like to do sheet pan meals and crockpot. Oh and I'll do chicken in the air fryer and roast veggies in it too. Yesterday I did broccoli after taking it out I added a little salt and pepper and drizzled just a tiny bit of Italian dressing. It honestly was super good. 😌
Love this video but please please o please don’t lose the homeschool content. I voted to see all of these new topics but it seems so many homeschool moms have turned and do not do any homeschool videos which is why I looked for them in the first place.
My daughter LOVES seaweed! I don’t get it! I thought she was an anomaly! 😂 It’s her standard grocery store “treat” and request. We buy our beef and pork the same way. We buy them from local kids at our county fair. I sent my husband alone this year and he ended up with 4 pigs so we gifted lots of it, but I need ideas and recipes for pork roasts and chops. Hahaha. Not an anomaly. 😂 Our favorite for pork roasts is doing Kalua Pork! It’s cooked with salt and a little bit of liquid smoke. So delicious! We also do BBQ shredded pork with the roasts or use them to make carnitas. 😄
Hello, my mother is gluten intolerant and I was soo intrigued that you also being gluten sensitive eat sourdough bread. Is this a recipe of yours you use? If you wouldn't mind sharing, I'm always looking for recipes for her.
Yes, as long as I do an overnight ferment on it, I don’t seem to have issues with it, my daughter as well. I wouldn’t recommend trying it if she has Celiac or something more serious, but if it’s just an intolerance, it might be worth a try! This is the pizza crust recipe I use. littlespoonfarm.com/sourdough-pizza-crust-recipe/ I basically use the same recipe minus the olive oil for baking a boule loaf in my Dutch oven as well. So good! Tons of great recipes on Pinterest, just make sure it ferments at least 8 hours before baking. 😄

What are some of your favorite quick and delicious meal ideas?
My kids love seaweed, I do too. So we make musubi and sushi pretty regularly. Not quick makes but yummy.
I use my instant pot most nights: enchilada soup, beef stew, pasta sauce, Spanish rice, Mexican pulled chicken Or I love baking one sheet meals
