how is this with brisket i have an electric masterbuilt one and it wont even hit 250 and the vent hole is smaller then my finger tip
Works great. On windy days it does struggle abit. So I just block the wind on the side it is coming from. Even have done brisket and other meats in the winter. (Michigan) I do close down the two rear vents. Not fully closed.

Can it use pellets?
I am not sure. Pellets would burn or smoke to fast. Thicker wood chips burn slowly. Plus Boss recommends soaking them in water first.
Bought mine for smoking salmon since it can get down to around 150 degrees. I've done it twice already, and the salmon has come out perfect.
Will have to try salmon.
@@teklifeadventures7375 I tried ribs and a pork butt, and hands-down the salmon was the best. I'll save pork for my charcoal smoker.
