I took three outstanding Italian chefs, all based in Asia, to China's most famous province for noodles to have a look and to learn. In this final episode, Riccardo La Perna (formerly of 8 1/2 Otto e Mezzo, Shanghai and Macau), Paolo Vitaletti (from Appia, Bangkok) and Marino D'Antonio (formerly of Giada Garden, Beijing) visit a vocational school in Shanxi province to watch a noodle demonstration and to cook for the students themselves.

I really love the line "humanity invented the noodle", and how it is exemplified throughout the series as the two cultures find similarity and connect through the common food of noodles, and especially how the Italian chefs are eager to try the different cooking styles in their kitchens. I think this is such a great series and I love the chefs featured.
Als so many combo's of cultures left te explore. Would love to see more!

These 3 specific Chef's are all from China/Surrounding areas lol, but I feel you, I bet they would make excellent tour guides for an Italian exchange!

Astonishing! This is better than any celebrity random food show. It's clearly for the love of food and culture, and NOT for the sake of making content. It shows. Never stop.
Thank you so much for making this series! I cried towards the end when I watched it. My family is from Shanxi and I lived a few years of my childhood in Shanxi. I lived with my aunt and she made the best noodles! My aunt took care of me when I was a kid as if I was her own and showed me unconditional love. I quite literally called her my "second mother". She unfortunately passed away from breast cancer and I can never eat her noodles again. Since then, I have tried quite a few times to make the three-layer noodles (which in Chinese doesn't really mean three layered) but have never been successful. I could never figure out why or find the right mixture of flours. After watching your videos, I can finally attempt the noodles again (and hopefully succeed this time)! My love for my aunt lives on through my love for noodles. Thank you once again for highlighting Shanxi and the great noodle culture there!
It's not even important if you succeed, or your efforts are as good as your aunts ( they never will 😊). It's the memory of the person that is important.
There's a soup my Czech grandmother made, which I don't even attempt, but every time my goose comes perfectly roasted out of the oven, because I do as she taught me, I'm happy and I remember. ❤

It’s so nice to see how curious both the Chinese students and the Italian chefs are when they’re standing next to each other in the demonstrations! You can tell when they’re talking or even if it’s just silence, everyone is so happy to be standing there close to each other, watching! And they’re all watching so intently :,) the cultural exchange and the eagerness to learn is so palpable in this video it’s really so beautiful. Such a wonderful atmosphere captured!!

This is incredible. Culture is different but the same human beings working together.
This series is so wonderful, it is not only about noodles, but more importantly, about PEOPLE! I've had Shanxi noodles 2 times in the USAone in LA called Noodles Palace (i had roasted gradma/ kao lao lao), and another is in St. Louis called Corner 21 (knife shaved noodles). Both were cooked by local ShanXi people, probably from the noodle school in the video haha😄 it was sooooo good.

A beautiful video. I used to eat hand pulled noodles and chive pocket every month back in China. Now I eat garlic eggplant pizza and seafood pasta every month. In noodle, we trust. It's amazing that Chinese and Italian cuisines share several similarities.

I wish they could have done a short interview with the kids and asked them questions about how they liked the pasta and did anything stand out about it in particular, would they prefer making pasta or chinese noodles etc etc.
哦这些孩子大部分应该都是山西人😂所以我猜他们绝对会选择山西的面条,那是他们的灵魂。中国的老一辈人不太习惯意面的口感和做法,年轻一代的接受度会高一些。中国人对意面的了解并不多,我猜很多人第一次接触意面应该是在必胜客。中国人喜欢意面吗?是的。但家乡的味道永远是最好的❤
大多数中国人了解的意面都是细长滚圆型的或者螺旋型的,对于酱料也只了解番茄肉酱。很难说我们喜不喜欢pasta,因为大多数人对pasta没有一个较完整的认知,不过在欧洲所有国家中我们确实最喜欢意大利和西班牙菜
得了吧,意大利面难吃还有我们是发明面食还有是美食之国,拥有丰富多样琳琅满目的美食每个省县市都有自己地方特色。😅

I have loved this series, it must have taken a huge amount of planning, but this really reinforced the message of how food and cooking crossed borders and brings us together, the chefs both Italian and Chinese curiousity was really lovely. No pizzaaaah? Haha 😆

Those students are the future of cooking. Makes me so happy to see the masters showing them. I hope we can someday have programs like that here in America with such care to students future careers and lives.

as an Italian, I am so proud of this chefs and their openmind. (which is many times hard to find in Italy due to it's heritage about pasta)
