How to Make VIETNAMESE Caramel Sauce

  • If you want to master Viet cooking, make this DIY pantry ingredient! It's not hard, but a little tricky so I made a video to go along with recipes in my cookbooks, "Into the Vietnamese Kitchen" and "Vietnamese Food Any Day".
    This is a casual video, so my apologies for the uneven audio. I'm a one person operation. That said, I think you'll learn lots to get you going on making a Viet staple.

    Thanks so much, it came out great! I was making a recipe from a cookbook and the instructions on the caramel sauce said to stir frequently the whole time, which is probably why i ended up with a pan full of dry, unbrowned sugar

    Hello Andrea. Is it supposed to taste bitter? I made a batch today and tossed it out.

      Hi Sai -- it is bittersweet so you may have been on the mark or slightly over the mark. Try again and back off the darkness a little. I didn't get it right my first few times. Hope this helps!

    Is it ok of there is a slight burning smell or did I already burn the sugar?

      It should not be acrid - distasteful. It is ideally pleasantly slightly bitter. Hope that helps.

    What about the part when fish sauce is added?! This video is unhelpful.

      @@umamizaddy I meant no offense.
      I wasn't asking. Fish sauce isn't a part of caramel sauce which is used in the creation of the end product like ca kho/thit kho. You use fish sauce separately to make them but don't add it while making the caramel sauce itself.
      Perhaps some do but I've never known it to happen in Vietnamese households (usually).
