Nice job. The sealing problem must be due to the cling wrap plastic as the thermocouple looked well sealed with silicone. Why not try again but instead of the plastic, get some fittings so you can have a tee with the gauge on top. On the branch install a valve to use as the vent, then close valve when ready.
