I just made these exactly like your measurements. Only thing I wasn't too sure about is the water that the Bacalao was boiling in if i was suppose to add that to the batter since it had a little salt flavor and I wind up using the whole packet of knorr sazon. As far as the Sofrito, I bought the goya frozen one (red) and added it to the batter. I think I was suppose to use the green one but overall it came out good. I'll definitely retry it again "exactly" like you. Thank you

I'm not a bad cook (made my first Pernil on Xmas 2009 and it was gone) so I'm definitely going to be making a lot of your dishes

My Grandma Masso was a wonderful cook and my mom after her and I've now taken over and am very interested in making some if these traditional Puerto Rican dishes. I've always made what my familia calls 'orange rice' but we don't use gondules or chicken in our family. My mom always used Vienna sausages and corn in ours. So I do the same. I know how to make perfect white rice with pegow ( don't know how to spell that but its pronounced like that) which is the crunchies at the bottom of the rice pan, my mom hates wet rice! We always use jasmine rice for both white and orange rice. Then I know how to make tostones with my wooden Mr.Tostone that was my grandmothers and passed to my mom and now to me as well as a big huge wooden, well seasoned mordar and pestle. We would make pinto beans in flavorful reddish sauce and pork roast with crispy skin at Christmas. But we always order our pasteles from "home" my mom is from Ponce. But I live in Seattle and there is only one Puedo Rican restaurant in the state! Its about an hour away for us so we only get to go a couple times a year. But now I can make these dishes at home because if your videos!! GRACIAS!! Oh I forgot two other dishes I've made for my whole life,rice pudding made with coconut milk with cloves, cinnamon sticks and fresh ginger root. And flan! We use half and half instead of sweetened condensed milk which makes for a much lighter custard! So now I will be able to add more dishes to the 5 staples I've made since I was a child!! I'm so excited that i stumbled upon your videos. Now I'm subscribed and about to show my mom so she can help me decide which dishes to try first, the stuffed potato balls, or these bacalaitos from scratch cuz I did try using the Goya boxed mix for these once but they were very salty and had bones or something in the batter that weren't very palatable!! We didn't enjoy those kind at all, but can't wait to use your recipe for our next try!! Yay!! THANKS. This half Puerto Rican chic is so HAPPY!!!!

Yeah i just get the cod fish fillets at the seafood deli instead. Im not crazy about the the salt content on the salted and its easier just getting the fresh fillet. I boil the fish til its breaking apart the put in ice water to cool befor i make the mix with the seasonings with chopped garlic ,culantro and cilantro. Works everytime and its easier.😊 Nice video👍
I was just thinking that I wanted to make this right now, but didn't feel like waiting overnight to soak the fish! I'm going to lightly salt my fish, then cook it until it flakes, like you mentioned. Thanks for the great idea!
@@mizzpoetrics I recommend buying cod fish by the pound at the seafood deli. The salted cod fish has too much salt and needs multiple soaking and rinsing cycles and takes to much work and time to get it right. Just buy cod from the seafood deli and ypu can season to your likeing. Better to have a non salted fish than having to be careful with an already salted fish. Just a tip. Good luck tho and enjoy. 😊

You can definitely use turmeric. Also you don't have to use recaito: you can just mince garlic, cilantro and ají dulce (and a little recao if you have it) and add it

I just made these, they were so tasty. But I did notice that they were sticking to the bottom so I had to scrape the bottom with a spatula, but other than that these were awesome. I didn't want to make too many but I have extra batter, can I store this in the freezer for later use?

Salted cod has a very different flavor to fresh cod. It's like comparing bacon to raw pork. I would try a smoked fish like trout as a substitution. You need an intensely flavored fish

If you have Amazon, you can order it through them. Salted cod is easy to ship. If you don't want to use them, you can use smoked fish like smoked trout (you don't need to do the water simmer process if using smoked fish). You need an intensely flavored fish and fresh cod is too bland in comparison
awesome recipe I make them but never thought of putting sofrito. Instead of sofrito I'll add garlic and cilantro. sometimes I'll add beer give it a little twist lol. Going to try it with sofrito next thanks for the idea.

I just made these, they were so tasty. But I did notice that they were sticking to the bottom so I had to scrape the bottom with a spatula, but other than that these were awesome. I didn't want to make too many but I have extra batter, can I store this in the freezer for later use?
Maybe your oil wasn't hot enough. I don't think you can freeze it
What should the temperature of the oil be? I followed recipe with oil at 350 and they fell apart.
Also, is the fillet already deboned or do you have to debone it yourself?

Do you have to use the salted cod? I found some fresh frozen cod fish in my super market! How do I prepare the unsalted one? Should I just boil it? Will it taste the same?
Salted cod has a very different flavor to fresh cod. It's like comparing bacon to raw pork. I would try a smoked fish like trout as a substitution. You need an intensely flavored fish

I moved to where they dont sell anything puerto rican. I cant find bacalao...could i use regular cod? And would i have to cook it before to make it easier to fry?. Thank you
If you have Amazon, you can order it through them. Salted cod is easy to ship. If you don't want to use them, you can use smoked fish like smoked trout (you don't need to do the water simmer process if using smoked fish). You need an intensely flavored fish and fresh cod is too bland in comparison
awesome recipe I make them but never thought of putting sofrito. Instead of sofrito I'll add garlic and cilantro. sometimes I'll add beer give it a little twist lol. Going to try it with sofrito next thanks for the idea.
