I am doing some research on making an evaporator and am leaning towards the barrel style. However, I have had some conflicting information regarding evaporation rates. Do you find after using your barrel evaporator that the time and effort justifies the amount of syrup ? Thanks in advance.
It's a question of love. I boil every spring and I just love doing it. When sap is flowing I collect and boil about 15 gallons per day which normally gives me a little over 2 litres of syrup. At the beginning of the sap season I need about 45 gallons of sap for 1 gallon of syrup but as the season progresses I need about 35 gallons of sap per gallon of syrup. I have 45 to 50 taps around my house. I burn around 3.5 cords of wood during the boiling season. Last year I got 6 gallons of syrup. If it's worth it? For me yes. What else would I do at this time of the year. To boil 15 gallons of sap it takes app 8.5 to 9 hours with my barrel boiler. When I boil I go out and cut some firewood or whatever else comes up. I am boiling now. Hope this helps. By the way I love my barrel set up very inexpensive to build and it wirks
If I close the chimney damper completely the smoke does come out around the pans, but if I close it to around 3/4 then no problem. The smoke comes out of the chimney stack only. Works really well. In my 3rd year using it and very happy with it.

Looking to do this but doesnt the smoke come pouring out around pans since its just a hole?
