What a very interesting vlog it just goes to show what a great engine the Puch Maxi is because it was in a right state when you got it but it must have been through some abuse. You did a great job with the restoration it's a stunning machine.

Hello Anthony. In my case there was no need to renew the brakes. I replaced fuel lines, petcock, derusted the fuel tank and coated it with epoxy. I had a lot of fun doing this.
Hello, It is a kit of products from the "Restom" company. It is composed of a degreaser, then a rust remover+ phosphat coating and last one is a protection coating. This is a french company, but I guess you can find the same kind of kit in your country. If not, search Restom on google.
For the Maxi S, the fly wheel tool remover has a diameter of 25.8mm with a thread pitch of 1.5mm But on the same tool, I have also a diameter of 21.8mm with a thread pitch of 1.5mm. It might fit on an other flywheel. I hope it will help you.

Can you tell me the size of the flywheel tool you use? I have a maxi K but im unsure of the mm of flywheel "thread"
