- Jaggery Moong Dal Halwa Recipe
Ingredients:
1/2 cup moong dal (yellow split gram)
1/2 cup jaggery (grated or powdered)
1/4 cup ghee
1 cup milk
1 cup water
1/2 teaspoon cardamom powder
8-10 almonds (sliced)
8-10 cashews (chopped)
8-10 raisins
A pinch of saffron (optional)
Instructions:
Soak and Grind Moong Dal:
Rinse and soak moong dal for 3-4 hours.
Drain and grind into a coarse paste using minimal water.
Roast the Dal:
Heat ghee in a heavy-bottomed pan.
Add the ground moong dal and roast on low-medium heat until golden brown and aromatic (about 15-20 minutes). Stir continuously to prevent burning.
Prepare Jaggery Syrup:
In a separate pan, heat 1 cup water and add jaggery. Stir until it melts completely. Strain to remove impurities and set aside.
Cook the Halwa:
Add warm milk to the roasted moong dal and mix well. Cook until the dal absorbs the milk and thickens.
Pour in the jaggery syrup and mix well. Cook until the halwa turns glossy and ghee starts releasing from the sides.
Add Flavor & Garnish:
Stir in cardamom powder, saffron (if using), and dry fruits. Cook for 2 more minutes.
Serve:
Garnish with extra nuts and serve warm.
