Alexander3487 You should just be able to invert the later masks to invert the area of the image you are affecting with your adjustment layers. Just select the layer mask in the layers panel and press CTRL + I to invert.

Yes! I don't have a tutorial on it myself, but look up Luminosity Masks. It is a method that allows you to make selections based on the luma, or brightness, of the image, rather than the colors :)
I'm sure you can do this in GIMP with a little more work. Just duplicate the image, desaturate the bottom layer, then use a layer mask to shown only the object you want to be colored.

I mean, when I click "Invert" the area I picked with the eye drop it becomes all red/orange
Sounds like maybe you accidentally went into Quick Mask mode (Q)
