Hey! I have the same ice maker but when i installed it i never adjusted anything i just connected the inlets and outlets and plugged it in. It works and produces a good amount of ice. But the ice melts fast, if i adjust the defrost setting will my ice stay cooler and melts less fast? Im thinking of adjusting the defrost like you did. Thanks for the video as well.

Unscrew backplate and then lift top like ~30 degrees (with backplate attached) and slide to the front.
You should add float switch into the tray better than removing cover for adding water😅
