I worked at an incredibly authentic Thai/Laotian restaurant for a while and this is almost exactly how the chef would make this soup! One of my very favorite dishes.
This came out delicious! Thank you!!! Just a note that on the recipe at the link, onion isn't listed as an ingredient and saw the recipe before the video. So, once I saw the video, I added onion to the soup. Also, you may want to add another lime to the ingredients list, since you mention having wedges for serving. Just minor details. Thanks for suggesting to remove the flavor items from the broth. That's one thing I don't like about some asian soups in restaurants, is sometimes you have to pick things out of your soup or your mouth if not edible like the lemon grass. One day I had a bad cold that I couldn’t shake, and went into a Thai restaurant and asked if they had a soup that would help the server suggested this I’m so thankful I can have a vegan option.
This came out so good but was not white. It's a brown color. I used lite coconut milk and mixed soy sauce and rice vinegar to substitute for the vegan fish sauce. Could these be the reason. It still tasted great but was surprised it wasn't white, like yours?
I'm glad you enjoyed it! Yeah, the light coconut milk is a lot thinner than full fat, and soy sauce is a lot darker than fish sauce. If could also depend on the broth or stock that you used. As long as it tasted good, that's all that matters.
Been on the hunt for a vegan fish sauce. Usually use the golden mountain sauce as suggested by other youtubers but will def have to give your recipe a try. As usual looks so hearty and delicious. Perfect for the fall weather. 🍜🌿👌🙌
Thanks! The fish sauce is really easy to make. It doesn't taste exactly like fish sauce. but in a recipe like this, it really fills the void very well. Its funky and full of flavor. The recipe makes 2 cups worth, with is a lot. I actually just filled and ice cube tray with the stuff that I had leftover from this recipe so that I can just easily toss it into a dish or soup. If you make it, let me know what you thought of it.

You can also use mushroom soy sauce witch i find to have a similar taste to fish sauce. I was shook when i first tasted it lol
