Typically water and oil are not buddies when it comes to cooking tomatoes stew.
Does the broiling of the fresh ingredients reduce the amount of water so there is a lot less splashing of stew on the walls and or stove ?

      Yes, that’s correct.
The broiling of the ingredients brings out the smoky flavor and enhances the taste of the jollof
