Mystery solved. Start with cold heavily salted water and add eggs, then turn on the heat to maximum. Bring to a boil and continue for ten minutes. Drain and run under cold water briefly. The egg shells will peel easily and there will be no black ring between the yolk and the white of the egg. As far as taste goes, the fresher the egg the better. If you can find eggs when raw have a bright orange yolk, those are fresh eggs.
