@Michael Tudda when i saw the chicken hearts and gizzards, I immediately started drooling. I agree with your sentiment of Westerners not trying these meats. Luckily, my Mexican father had us eating pigs feet, chicken gizzards, cow tongue, cheek, head, brain, and blood sausage growing up.
This is a great series in general but I particularly like this video. It is inspiring to hear how many thoughts are needed to provide a consistent, pleasant experience to customers. I am particularly benefited by the Chef's "No" to customer, such as not giving them sauce when they ask for it. It shows being just people-pleasing and agreeable alone does not constitute quality. Quality comes from firm knowledge in a craft or skill. And the chef does not let his pride in the work goes above his care for others based on the tone he speaks of things in general. It shows just being self-perfecting isn't formula of highest quality. Both pride and care for others need to be present.
How he really paid attention to the fat quality and how he reacted when his customer ate the yakitori unproperly really showed how much love and passion he has towards providing excellent food and service towards his customer. Honestly it is very heartwarming for me personally
Eater is the only cooking channel you will you watch people go through life-defining moments, they are so good at uncovering the different roots of cooking rather than saying "it is delicious"

Probably has something to do with the fact that all of our ancestors ate meat on a stick cooked over fire regularly at very far off past.
