Good consistency and texture. They don’t even need to be dusted with flour after cutting to keep them from sticking. You can tell these noodles will not fall apart and will last a long time in the fridge/ freezer because you can swing them around like that without them breaking 😆.
I am impressed. I never could quite get the pasta maker to do my noodles as thick as I liked. And was always a hassle getting it all out and then washing it all up. I also broke my very expensive kitchen aid mixer making this noodle dough. It’s a thick dough and it caused it to jump around and rock. It eventually messed up the bottom and small bits of metal were falling in the bowl. Yikes! It is rough on the gears inside as well. I bought another mixer. This is abt the only thing I use it for lol. But I started just going back to doing it by hand and found I’m much faster that way and I can get the noodles a bit fatter like my kids like. I don’t have as much clean up by hand as well. But I make small batches usually tho. I used to use a one to one ratio mix as well but I went to a 2 to 1 ratio. Rice flour to starch. I found it keeps the dough from springing back when I roll it out. And a tad less chewy after it’s cook. You make this look so easy I’m tempted to give the pasta maker another go! Especially if I am making a lot of noodles for more than just my small family.

Hi, I am unsure if humidity played a part and would think not but could be wrong. It could be the specific brand of flour you used if you used a different brand. If too sticky add a little more of each flour.
Could you clarify if you "pack" the flour in the cup when measuring it out or do you loosely scoop out each cup of flour? If you know the grams vs cup measurement that would be helpful. Thanks!
Just tried your recipe and another person’s and when rolling them flat, they both weren’t smooth like yours. Maybe I should’ve added maybe another tablespoon of water? But they both still cooked well. I just wanted them to smooth. If that makes sense.
Ty to share the recipe. Anyway I tried it today and I don’t know what did I do wrong. My dough was wet I used the same brand u use and I added more flour both kinds of flour and still wet the dough could not make shape to put in the rolling and cutting machine. So I decided to put in my pressure tube and put it boiling water and it came out good. But still don’t know why the dough wet . Do u have any idea? Ty

Hi, loosely scoop. Sorry I have yet to measure in weight. If it feels wet, add more tapioca starch.
Can it cut it thinner? Or it just have one size?
The cutter had two size (spaghetti and fettuccini). The roller has 8 sizes on how thick or thin you want.

It could be that the dough needed to be knead a little longer. Too much water will make it sticky.
