    I'd love to have a market like theirs in my neighborhood. Do you think gluten free flour would work in place of the regular?

      It should, although I haven't tested the recipe with all the varieties. In general if it's something you've had success with baking similar recipes before it should be fine - but you'll still have to try it to find out. Please let me know how it turns out.

    I like your comment about the almond flour adding a macaroon texture and flavor to the dough, but the posted recipe does not contain almond flour. How much almond flour should be used?
