If your pineapple is raw, don't use dairy milk. the enzymes will break down the casein and make a bitter nastiness after a while and also release water.

I made pizza with fresh instead of canned pineapple one time. The cheese turned to bitter runny goop instead of nice stretchy pizza cheese.

When I was in Hawaii, I went to the Dole Plantation and tried their dole whip and I was so shocked to find that it was Dairy Free and Vegan!! It tasted so NICE!!

I just tried this recipe and finished it in 1 sitting! Super easy and yummy! I put some coconut bits in there too.

I made this for myself and my husband tonight. It’s absolutely scrumptious and so healthy. My husband is lactose intolerant and I have been diagnosed with diabetes. Instead of using coconut juice I used fresh pineapple juice. Quite a treat for my husband. He loved it.
Like a soft serve ice cream for him. I made popsicles with the leftover. For myself I added a bit of heavy whipping cream. Just enough to satisfy that urge for sweets without the added sugars. Can’t wait to make for my grandson when he visits us this summer.

I went to Hawaii last week and tried this dole whip at Petes coffee and I can tell you it was one of the most delicious things I've tried there!

You should try (in eating and making) their Monte Cristos. The original is my favorite Disneyland food!
