I like how what I've seen so far really doesn't mess up the game. You would think the presence of guns, especially HALO guns, would mess up the balance of the game. Instead, it's rather balanced.

The way that I generally learn to mod a game is I first just learn to roughly read the code (which is surprisingly easy for any game which has human readable code; even if it looks like a mass of letters you're 95% looking for keywords rather than trying to actually read it), then just sort of screw around till I either break my install or it works. This is easier with some games than others but its also always viable. You can use the provided example by breaking everything down and just trying to figure out what some of the phrases might mean, put it in context, and realize that its determining whether the player is allowed to roll and then determining the correct roll animation to use by grabbing a bunch of different variables. Its entirely possible I'm wrong since I've never tried to mod dark souls, but it doesn't take much to read a lot of game code especially if it has dedicated modding tools.
We have to be more diligent in reminding Makari to not keep stopping before the end. missed a lot of end vid gags that way and entire video punchlines.
