English Version Steamed Milk and Egg White Pudding Ingredients: Egg white from 3 large eggs Milk double the amount of total egg whites (1:2 ratio) (at room temperature or warm) Sugar 2 tbsp or 1 ½ tbsp if eaten warm (more or less depends on your sweet tooth) Drinking glass 2 Small bowl 2 Methods: 1. Heat up wok, add water, put in a steaming rack stand, and turn on HIGH heat while you prepare the pudding mixture. 2. Separate the egg whites into a drinking glass where you can see the level of the total egg whites that they have reached at. 3. To determine how much milk to add, use another similar empty drinking glass, place it beside the glass with the egg whites, pour enough milk into the empty glass until it doubles in volume as the glass with egg whites. Ration is 1:2 for egg whites to milk. 4. In a medium bowl, add sugar, add milk and stir slowly until sugar is dissolved. DO NOT over stir or create bubbles, this will have wrinkle appearance on your pudding top layer after steaming. 5. In a separate bowl, add egg whites. Beat lightly. 6. Combine the egg whites into the milk mixture. Beat lightly and mix well. Sift mixture 3 - 4 times for extra smoothness. 7. Prepare two small empty bowls. Pour sifted mixture SLOWLY and evenly into the small bowls. Flatten and discard any bubbles on top. Cover bowls with plastic wrap or aluminum foil. Pierce a hole in the center of each bowl with a knife to vent the hot steam during steaming. 8. Place wrapped bowls onto the steaming rack stand inside the preheated hot wok. Steam HIGH for 5 minutes. After 5 minutes, turn OFF heat. Open wok lid to release the hot steam. Close wok lid back to the wok and simmer for further 7 - 8 minutes without heat. Serve. You may eat it cold by putting it in the refrigerator NOT the freezer. 9. If you find that you can not place a spoon on top of the pudding without sinking, you may return it to the wok and steam in on HIGH heat for further 1 minute. Methods: 1. Wash chicken, remove lungs inside cavity, if any. Marinate with sand ginger powder and salt (OMIT salt if the sand ginger powder has salt included). If you DO NOT have sand ginger powder, you can replace and marinate with coarse salt, white pepper, and Shaoxing wine. Marinate for 15 minutes. 2. Cut gingers into thick slices and mash to release more flavor. The thickness of the ginger slices is to prevent the chicken from touching the bottom of the rice pot. Cut shallots in halves. 3. In the rice pot, spread ginger slices evenly to cover the bottom of pot. Add shallots. Add spring onions knot. Add the marinated chicken. Lastly, depending on the size of your chicken, drizzle 2 to 4 tablespoons of Shaoxing wine in. 4. Put the rice pot in the rice cooker. Cover lid and select rice cook mode. Once it is cooked, do not open lid. Let chicken simmer for further 8 minutes for small chicken and 10 minutes for large chicken inside the rice cooker. I made the chicken cooked in the rice cooker before, in Malaysia, we don't always add the Sand ginger / 沙姜. I added in salt, pepper, cooking wine, sesame oil , crushed ginger, green onion to marinate overnight. When cook in the rice cooker, I will add in sliced ginger, green onion , place the chicken inside and pour in 4 spoons of cooking wine, and press cook rice. When it popped up. stand 10 mins. I didn't pour the ice water over the skin, Will do that. Thank you Maria.

This step is to add volume and thickness to the pancake. 6. Add the mixture in step number 4 into the wok. Swirl the mixture evenly in the wok to shape into a pancake on LOW heat. Fry until fragrant and light brown. 7. Flip the pancake to fry the other side as well. You may use a plate and cover the pancake first then flip over the wok together holding the plate at the bottom. Return to pancake to the wok and continue frying the other side until light brown on LOW heat. 8. Transfer to a plate, cut into pizza-like slices, and serve.
