    Ingredients -
    2 Tbsp (40ml) - Olive Oil
    1 tbsp (14g) - Unsalted Butter
    1kg (2.2lbs) - Beef Chuck Steak, Fat Trimmed & Diced
    2 tsp (5g) - Smoked Paprika
    8 - Red Shallots, Peeled & Halved
    4 - Garlic Cloves, Grated
    4 Tbsp - Concentrated Tomato Paste
    2 tsp (10g) - Brown Sugar
    2 tsp (10ml) - Soy Sauce
    1 Litre (4 Cups) - Good Quality Beef Stock
    5 Sprigs - Fresh Thyme
    5 - Sprigs - Fresh Flat Leaf Parsley
    1 1/2 Tbsp - Corn Flour (You most likely won’t need this)
    400g - Yukon Gold or Desiree Potatoes, Quartered
    Salt & Pepper To Taste
    Bread to Serve
    Method -
    1. Place a high-rimmed pan or pot over high heat. Add olive oil, beef salt and pepper and sear for 6 minutes or until browned. Reduce heat to medium-high. Add unsalted butter, smoked paprika, shallots, garlic and concentrated tomato paste. Cook for 4 minutes, mixing well.
    2. Add brown sugar, soy sauce, beef stock, thyme and parsley, salt, and pepper. Mix well and bring to a boil. Reduce heat to low, cover and simmer for 1 1/4 hours. Remove lid.
    3. Add the quartered potatoes and stir through the sauce. Bring the sauce back to a boil, reduce the heat to low, and simmer it, uncovered, for 35-40 minutes or until the potatoes are fork-tender and the beef is very tender and soft. Check to season and remove from heat.
    4. Serve the beef and potato stew with mash, crusty bread, rice, or on its own. Dig in.
    Note -
    I said corn flour in the introduction but didn’t use it in the recipe. It’s not needed

    I couldn’t see where you used the cornflour. Also tablespoon (Tble) and Teaspoon (Ts) I’m used to, followed your instructions but who knows how it will turn out by the wrong amounts ive used 😂. Just not used to the Aussie cooking terminology.

    I think I will try this but Will leave the Soy Sauce out and reduce the Smoked Paprika to adapt to my pallet hope you don't mind

    Just an update Chef Jack. The weather is cooling off here and I’m looking for things to throw in my slow cooker and wanted your stew so came with the intention of writing ingredients down for shopping list. Where I live it’s hard to get chuck steak or stewing steak, so could I sub rump? Or it’s really not a good sub? This is being cooked in a double batch this weekend.

    Just looking for simple beef stew and UA-cam recommended you. First time to watch and try your recipe. Just made a little adjustment with what I had. Replace shallots with yellow onions and add some chili. Omg the results is really good. Perfect with unlimited rice because I’m Asian living in Montreal. Thank you. ❤❤❤

      No I don’t end up using it. It wasn’t needed. Had it there as a worse case scenario. There’s a little note in the description

    I noticed you had flour or corn starch on the counter but you didn't add it to your recipe. Was it edited out by accident?

    LEAVE THE 2 tsp (10ml) - Soy Sauce OUT. IT'S Wheat based. indead you don't need cornflower aswell. the sauce will thicken itself. So you don't need any gluten in it. What a shame. Otherwise i could eat with you. oh so much sugar doesn't make it healthy aswell.

      Weird energy from this comment. The word is indeed. Corn Starch and Soy sauce don't always have gluten. Pretty easy to find the versions without.

      Soy sauce is needed. Cornflour is not used I had it there for worst case scenario and I have a note for it in the description. You can use gluten free soy sauce. It’s a very minuscule amount of sugar divided by 4-6 that this recipe serves
