It seems very tricky to track strings if you’re not also mixing the song. If you have a well arranged demo then you will know how the strings should sound within the mix regardless of if they sound good alone. Otherwise you’re just shooting for flexibility. You have good ears, sir!
I've done hundreds of these string sessions and I would suggest a real stereo mic technique like ORTF or AB. Never double track a string quartet. Sounds terrible.

Very good advice! Also be careful with microphones that have a HF lift, they will amplify unwanted bow noises if you are too close in.
