"Machh er jhol" is one of my all time favorite foods, and you have done it perfectly. Just would like to mention two things: i) we do add fresh coriander leaves in some machher jhol and ii) actually, coriander powder goes very well with fish.

@@rohitnigam3355 no ..not as tempering in macher jhol...but use mustard paste as masala in some fish curry like hilsa ,,parse,, pabda( salty river water fish) etc...there are uncountable types of fish curry.....but most common tempering is with onion seeds ....and sometimes cumin seeds

Chef Brar - you grew up as a Punjabi in a Bengali "Tola" - I grew up as a Bengali in a Punjabi "Tola" :) - I passed on my love for Punjabi Dals to my children who love to eat it with homemade Makkhan. I just want to add that to thicken the gravy we don't add onions. but we take a couple of potato slices and mash them into the gravy. With summer coming find a recipe for "Aam Catla" - I prefer "Catla" fish because the pieces served come out larger. Summer afternoons after eating this preparation with raw mangoes and mustard seeds paste (on a Sil Batta) it was heaven to slink off to a cool part of the house and fall asleep. People use blenders now but growing up I remember the spices were always blended on Sil Battas. My mother would say that the blenders heat the Masalas and ruin the taste. I don't own a Sil Batta but I use an Electric Stone Grinder. It is the best "Jeere Bata" I can get in NY. I enjoy your stories. How I would love to sit with you and listen to your stories. Because what are we without our books, stories and cooking ?
Being a Mumbaikar I have always relished the sea water fishes from pompfret to Bombay duck, but when I saw your video and decided to make a exact replica of the dish I just realised machar jhol now holds a separate place in my heart. I've had rohu fish curry today in lunch!!! Extremely delighted and proud to watch this recipe being a bengali❤️. But I would add a little bit of "jeeray bata" (cumin paste) to this recipe, because I think this would elevate the recipe to another level.

Comparing Bengali fish recipes to Bihari ones is a insult to the to the plethora of fish recipes in Bengali cuisine, starting from everyday machher jhol to delicacies like bhapa illish, bhetki paturi or chingri malai curry. They are not the same!

Surrounded by Bengalis on all sides, my para is called Chakraborty para, my neighbours are Sarkars, Chakrabortys, and I feel you when you say you were raised with the subtle nuances of Bengali cuisine! I leave alone in Russia and being a bengali i can never think without Macher Jhol. So i went to my local market and managed to get a carp. I am sharing my recipe which i got from my mother. Its simple easy and delicious. Marinade the fish with excess of turmeric and salt. Fry them in smoking hot oil. To the remaining oil add jeera and dry chilis. Add chopped onion, green chilis, saute for few seconds, add potatoes, salt and turmeric, sauté followed by tomatoes. To a bowl, add chili powder, Cumin powder and coriander powder. Add few teaspoons of water to make a paste. Add the paste to the pan, saute and add water. When the boil comes, add fish, let them boil for few minutes and adjust the salinity. Garnish with chopped coriander leaves. It will take 20 minutes and it tastes awesome.
My mother used to make Rohu fish curry in our home in Lucknow. Fish seller used to come everyday on bicycle to sell fresh fish. We also had lot of Bengali families in New Hyderabad locality in Lucknow.
Hi Ranveer, am a Bengali and really enjoyed how you used all the bengali terms in this video. I am these days in love with one fish recipe. Its with Pabda maach. I blend some ginger, green chili, coriander leaves and kalo jire in a mixer and make a paste. Marinate the fish with salt and turmeric as usual and fry them in oil. Keeping them aside in the same oil the add a little bit of kalo jira as foron then put the paste in and fry that for few min. Then add little water, not too much, for the gravy, add salt to taste and a pinch of haldi powder. lastly add back the already fried fish. let it cook for few min and you are done. Garnish with some more coriander leaves and green chili. I also like to squeeze a dash of lemon on my fish just to cut the fishy smell and enjoy with gorom bhaat.....too good!!

Chef, hats off to you for capturing the soul of bangalir macher jhol. whenever any non bengali asks me about this, I discourage them because I feel it is a very acquired taste that not everyone can appreciate it. But your addition of tej pata and onion paste will make it a delectable dish for all Indians. Thanks for popularizing my all time favorite ❤
Tez patta and Onion are generally used in East Bengal. We as Shyleti do use both of them. If it wasn't a tomato based one, we would have also used Jeera powder and a bit of garam masala on just aaloo torkari.

Adding exotic things will anyways make the food taste good, but the real test of taste is when the food is cooked with less ingredients.. And when we talk about Bengali cuisine... Machher Jhaal (onion seeds, turmeric powder, red chilli powder, and green chillies) is one of the best example :😀😀

I am a fish lover and I keep doing lot of different curries. I had watch a fish curry in Calcutta in 2003 with kasundi. Just by eating I came to know what all as gone in it and when I came back to Bombay I made it here with Rohu and it turned out fabulous. I haven't made it in long time now. Please come up with more of fish dishes. I also cooked British fish and chips at home.

Its the very Bengali Macher jhol. ❤❤❤ for this chef! One thing that my mom used to do us add little jeera paste or diluted jira powder while sauting masala. This takes away the 'gondho' or smell of the fish and takes the taste to another level. And few crystals of sugar... for the mishti lover bengali😉

I leave alone in Russia and being a bengali i can never think without Macher Jhol. So i went to my local market and managed to get a carp.
I am sharing my recipe which i got from my mother. Its simple easy and delicious.
Marinade the fish with excess of turmeric and salt.
Fry them in smoking hot oil.
To the remaining oil add jeera and dry chilis. Add chopped onion, green chilis, saute for few seconds, add potatoes, salt and turmeric, sauté followed by tomatoes.
To a bowl, add chili powder, Cumin powder and coriander powder. Add few teaspoons of water to make a paste.
Add the paste to the pan, saute and add water.
When the boil comes, add fish, let them boil for few minutes and adjust the salinity. Garnish with chopped coriander leaves.
It will take 20 minutes and it tastes awesome.

My mother used to make Rohu fish curry in our home in Lucknow. Fish seller used to come everyday on bicycle to sell fresh fish. We also had lot of Bengali families in New Hyderabad locality in Lucknow.

Hi Ranveer, am a Bengali and really enjoyed how you used all the bengali terms in this video. I am these days in love with one fish recipe. Its with Pabda maach. I blend some ginger, green chili, coriander leaves and kalo jire in a mixer and make a paste. Marinate the fish with salt and turmeric as usual and fry them in oil. Keeping them aside in the same oil the add a little bit of kalo jira as foron then put the paste in and fry that for few min. Then add little water, not too much, for the gravy, add salt to taste and a pinch of haldi powder. lastly add back the already fried fish. let it cook for few min and you are done. Garnish with some more coriander leaves and green chili. I also like to squeeze a dash of lemon on my fish just to cut the fishy smell and enjoy with gorom bhaat.....too good!!

What kind of fish did you use?
It is staple dish of every Bengali family. Everyday, Mom, aunty, mashi, pisi and thakuma sobai ei recipe toiri kore - I mean we prepare it. Though, I prefer Katla or Sol Fish instead of Ruhi.

Tez patta and Onion are generally used in East Bengal. We as Shyleti do use both of them.
If it wasn't a tomato based one, we would have also used Jeera powder and a bit of garam masala on just aaloo torkari.

I am a fish lover and I keep doing lot of different curries. I had watch a fish curry in Calcutta in 2003 with kasundi. Just by eating I came to know what all as gone in it and when I came back to Bombay I made it here with Rohu and it turned out fabulous. I haven't made it in long time now. Please come up with more of fish dishes. I also cooked British fish and chips at home.

One thing that my mom used to do us add little jeera paste or diluted jira powder while sauting masala. This takes away the 'gondho' or smell of the fish and takes the taste to another level. And few crystals of sugar... for the mishti lover bengali😉
