The cream of tartar helps the snickerdoodles have its classic cracked puffy texture and chewiness. I guess the cream of tartar as well as the cinnamon sugar mixture helps it differentiate itself from a regular sugar cookie.
Danny, I know the correct pronunciation of cream of tartar but I say cream of tar tar because it is more fun. I even got my grown kids saying it. lol Nothing wrong having fun with words. Love your videos.
I've heard that the cream of tartar adds the chewiness to the cookie. If you're up for a challenge, try making the same cookie and just removing the tartar and seeing how the texture changes. :) Might make for a good video!
