is it possible to make a custom wieldable weapon rig?

To a degree! You'd have to literally rig it to your model's hands so that it covers the weapon you're using so it'll play animations. I personally haven't done it, but it's probably easiest to do using knives and pistols as bases for melee and ranged, respectively.
