I had the same bug, changing from long gun to hand gun didn’t help but when I switched out my guns for different ones it fixed it. Scared the crap out of me I was on a hardcore vet run and thought i might have to reset but that ending up being the run I unlock savior glad I didn’t reset
Had this same issue happened to me on one of my hardcore runs. Force closing the game & loading back up seems to do the trick in fixing it. I play on PC but I assume this will work for console players as well. Edit: just read your description & saw you pretty much did the same thing I did.

Apparently switching guns in the build menu will also fix it
